Vanilla Cupcakes with Lemon Buttercream




In line with the Statement of Gratitude of the tag in my previous post, I baked these Vanilla Cupcakes with Lemon Buttercream for a home fellowship meet of a close friend, Philip. We had known him for many many years and he has been such a great friend. He is one friend who had always been there for us when we needed help.

I recall many years ago when I was a new mother and hubby was away on business, he was the first person who came to my rescue when my house was flooded. I was staying in a single storey house then. Seeing the entire house covered with more than 6 inches of water with a toddler who could barely walk I was at a total lost. Fortunately, he was there to help me elevate some of the important stuff that could be damaged by the flood water. He accompanied us till the water subsided and help me washed up the house that by then was covered with a layer of thick mud. I am forever thankful for having such great friend.

This cupcake is made using my previous Magnolia Cupcake Recipe and the recipe for lemon buttercream is as follows:-

Ingredients
90g butter
250g icing sugar
3 teaspoon lemon juice
lemon zest for decoration
red heart candy for decoration

Bake cupcakes and leave them to cool to room temperature before icing them.
To prepare icing, cream butter, icing sugar and lemon juice until smooth and creamy. Pipe in circular motion from outer ring of cupcake ending in the centre using a large star nozzle. Decorate with lemon zest and red hear candy.
