Spicy Tuna Quiche

We had our Ladies' Fellowship meet in church last Saturday. As usual such meeting can't do without food. So I brought along a Spicy Tuna Quiche. What to do, we are Malaysians after all. According to some of my foreign friends, we Malaysians eat all the time. The first timers to KL whom I knew were amazed at the variety of food we get here.

I must said that this Ladies' Fellowship meeting was the most fruitful one that I've attended so far. Fruitful in the sense that we are finally doing something more significant for the community. We have decided to start a charity drive to support some of the extremely poor families that my church member through Malaysian Care (Prison Ministry) is currently working with. Though our small church is now supporting 2 families there are more out there in desperate need for help. Most of these families have at least one member in prison and usually is the father. The wife and young children are left to fend for themselves.

In our effort to start this Charity Drive, we appeal to our church members to either donate in kind (basic essentials, used clothing, used household items, etc) or cash. The cash collected will be used to purchase basic needs for these families. I come to understand that most of these families have only 1 main meal a day. How sad that some times we waste food without having second thought.

Coming back to the quiche, I can't recall when was the last time I made one. I must confess that I hardly bake quiche as both hubby and Sydney are not great fan of it. I often wonder whether is it because I am so bad at making quiche or simply because they had poor taste. The response I get from the ladies after tasting my quiche concludes that both hubby and Sydney has poor taste *grin*.

Here's the recipe for Spicy Tuna Quiche.

Ingredients for crust:-
180g plain flour
90g butter
3-4 tbsp cold water

Ingredients for filing:-
1 small onion
1 red chili
1 tbsp spring onion
1 tbsp cooking oil
1/2 a canned tuna in water (340g per canned)
1/4 cup grated cheddar cheese
3 eggs
1/2 cup cream
1/2 cup milk
salt and pepper to taste

For crust
Sift flour into bowl, rub in butter and mix with water to form a pliable dough.
Cover and refrigerate for 30 mins.
Roll out pastry to line a 24cm flan tin.
Bake blind (line pastry with grease proof paper and top up with uncook beans or rice) for 10 mins in oven pre-heated to 180C.
Remove beans/rice and grease proof paper and bake for further 10 mins.

For filing
Heat a pan with hot oil and saute onion and chili. Remove from heat.
Stir in mashed tuna and spring onion.
Scattered cheese evenly on baked crust then follows by tuna mixture.
Combine eggs, cream, milk, salt and pepper; mixed well.
Pour mixture into pastry case.
Bake for 30 mins or until golden brown.

Love spicy tuna but never try with Quiche b4..How it's taste?...look like pizza!!lol! Hmmm maybe I will bake for hubby!.Thanks for sharing:)
