Banana & Coconut Muffins


The banana muffins that were featured in my previous post actually are Banana & Coconut muffins. As promised here's the recipe:-

1 3/4 cup plain flour
2 tsp baking powder
1 tsp bicarbonate soda
1/2 tsp cinnamon powder
1 cup brown sugar
1/2 cup dessicated coconut
4 large bananas - mashed
3/4 cup corn oil
2 large eggs

Sift together plain flour, baking powder, bicarbonate soda and cinnamon powder into a mixing bowl.
Then add in sugar and dessicated coconut.
Make a well in the centre and stir in eggs and oil until well mix.
Spoon mixture into paper cups to 3/4 full and bake at 180C for 15 to 20 minutes.

You will probably notice that I did not use any essence for this recipe. This is because the species of bananas that I used which is called berangan are very flavourful and have nice fragrance.
