Tiramisu Cake

Hubby celebrated his birthday last week. My hubby is an ardent fan of all things Volkswagen. For his birthday, I was planning to bake him a Volkswagen look alike car cake. Better still if I can shape it to look like a Beetle. However, when I told him about my plan, his response was 'No need to go through so much trouble lah, a Tiramisu cake will do'. On one hand I was disappointed with his reply 'coz I will not be able to try my hands on new cake design but on the other hand I feel relief as I know my cake will be well received. I have baked this cake many times before and it never fail to please the crowd. And true enough, the birthday boy (or should I say MAN) was very please with his cake and so were the guests.

Here is the Tramisu cake recipe that I used.

(A)
1 packet sponge fingers
2 tbsp Kahlua
4 tsp instant coffee
1/2 cup water

Mix Kahlua, instant coffee and water. Dip sponge fingers in coffee mixture and line base of baking tray with the sponge fingers


(B)
4 egg yolks
70g castor sugar

Double boil egg yolks and castor sugar for 5 mins or until mixture turn pale and sugar has dissolved. Stirring all the time. Remove from heat and continue to stir until mixture is slightly cooled. CAUTION : boiling water from pot must not touch the container with egg mixture.

(C)
250g mascapone cheese
2 tsp Kahlua

200ml whipping cream, whipped till stiff

Cream mascapone cheese with Kahlua until smooth. Stir in egg yolk mixture then fold in whipped cream. Pour cheese mixture over sponge fingers and spread evenly to cover the sponge fingers. Refridge until set. Lightly sprinkle with cocoa powder before serving.

I used a loose bottom pan for this cake and I line the base of pan and side with aluminium foil for easy removal.

And here's the cake....

For decoration, I used a packet of sponge fingers and cut them into half. Then place them around the cake before fastening with a ribbon.
