A friend invited us over for Hari Raya lunch. Surely we can't go empty handed. Therefore, I decided to bake them some moist chocolate cupcakes. These cupcakes are frosted with buttercream and topped with a light springkle of cocoa powder.
The recipe that I used is adapted from Betty Yew's Kitchen Secrets.
Here are the ingredients....
180g butter
320g castor sugar
3 large eggs
1 tsp instant coffee
1 tbsp hot water
1 tsp vanilla essence
1 cup water
Sifted together :-
240g plain flour
75g cocoa powder
1 tsp baking powder
1 tsp bicarbonate soda
1/2 tsp salt
Dissolve instant coffee in hot water and then stir in vanilla essence and water; set aside.
Cream butter and sugar till fluffy. Add in egg (one at a time), beat for one minute each. Fold in flour alternate with coffee mixture. Fill cupcake pan and bake at 170C for 15 to 20 minutes. Cool completely before frosting
For frosting......
250g butter
500g icing sugar (sifted)
1 tsp clear vanilla essence
2 tbsp water
Beat the above frosting ingredients till smooth. Pipe on cooled cupcakes then sprinkle with cocoa powder.
And.............here's the end product.

yozoranitesky : thanks for dropping by :). I use a star nozzle to pipe in circular motion starting from the outter side of the cupcake moving towards the centre and ends in the middle of the cupcake. Hope this helps.

love your cupcakes =) can you pls share with me, how did you bake your cupcakes so that their 'dome' surface is nice? my 'dome' is always 'senget' and never in the middle =(
