Magnolia Bakery, as most people know is a renown bakery in New York that popularised cupcakes and gave them the same glory as gourmet cakes. I often wonder what their cupcakes taste like.
When I stumbled upon this recipe from the Internet; supposedly released by Magnolia Bakery, I just need to give it a shot. Well, I must say that I wasn't disappoint at all. In fact, I like the texture of the cupcake very much. It is soft and fluffy somewhat like a sponge cake. The only set back about these cupcakes are they are a little too sweet for me even after reducing the sugar by 25% (1/2 cup). The next time I bake them, I will surely reduce the sugar further to 1 1/4 cup.
For those who would like to give this cupcake a shot, here's the recipe :-
Ingredients
2 3/4 cup plain flour
2 tsp baking powder
250g butter
1 1/2 cup sugar (original recipe - 2 cup sugar)
4 large eggs
1 cup milk
1 tsp vanilla essence
Cream butter, sugar and vanilla essence until smooth and fluffy.
Add in eggs, one at a time and beat well after each addition.
Fold in flour alternate with milk; ending with flour.
Fill paper cups with cake mixture to 1/2 full.
Bake at 170C for 15 to 20 mins.

little corner : Per recipe should yield 24 standard size cupcakes. Mine seem a lot 'coz I made 1 1/2 recipes and used a slightly smaller papercups for a church gathering.

hi, love the cupcakes. i have realised that receipes from the states are without fail very sweet. i now always cut down the sugar by 1/2 then assess from there if i should cut down further. have gone down as low as 1/3 sugar and been pretty happy with the results. (if its not sweet enuf its nothing your pretty icing wont cure!)
